Minimalistic Banana Cake

When we buy bananas at home, they quickly become very ripe. We often end up just throwing those bananas in the trash. But you definitely shouldn't do that, because you need especially ripe bananas (whose peel is completely dark) for a delicious banana cake. I like to eat it warm with vanilla ice cream.


Ingredients:


2 large eggs

100g sugar

150g flour

2ts baking powder

200g very ripe bananas (2 medium bananas)

1dl regular milk or coconut milk


Optional:

1dl chopped walnuts or chocolate


Preparation:


Beat the eggs with the sugar until fluffy. Mix the flour and baking powder in a second bowl. Mash the peeled bananas with a fork in a third bowl, stir in the milk. Add the flour mixture by turns with the egg-sugar mixture.

Grease the cake pan with butter or line with baking paper. Pour the batter into a cake pan.

Bake in a 175C oven for about 50 minutes. Check with a wooden stick if the cake is ready.

Let the cake cool in the pan for 10 minutes, then serve with ice-cream.
