This is an old Skandinavian dessert for Christmas Eve. It is belived that the person who gets an almond in their dessert will have a very successful year. In our family we have prepared this dessert for every Christmas for over 10 years. I put below some pictures of progress.
Ingredients:
100ml of water
100g of rice (porridge or long grain)
500ml of milk
1-2 tbsp of Vanilla sugar
1 tbsp of sugar according to taste (maybe more)
400ml of whipped cream (35%)
Recipe:
Sprinkle the rice into the boiling water and cook for 2 minutes, stirring all the time. Then add milk and vanilla sugar. Let it boil again and simmer under the lid on low or medium heat. Stir it occasionally until the rice is completely soft. This will take about 35-45 min. Allow the porridge to cool completely. Whip up the whipped cream together with the sugar until you get a strong foam. Make sure not to over-whip the cream, because then it will turn into butter. Then carefully mix the whipped cream with the cold rice porridge. Finally, stir in 1 almond. It is recommended to eat the dessert right after preparing. If you cannot eat it right away, put the finished mixture in the cold for the time being.
